re. Pollo/Gallo, isn't that more like the Beef/Cow, Pork/Pig, Veal/Calf distinction? I always thought that - in English - that was a reflection of the Norman Conquest where the peasants raised the animal (Anglo-Saxon animal names) and the French-speaking lords ate the meat. But Italian has similar distinctions without the same language history.
